Beef Chimichangas

Ingredients

  • Hat Brand Beef chuck roast
  • Onion
  • French onion soup mix

Directions 

  1. Brown roast on each side in a roasting pan
  2. Cut onion in half and add to pan
  3. Sprinkle french onion soup mix packet over roast
  4. Bake roast at 285 degrees for 5-6 hours (or until tender and falling apart)

Beef Chimichangas 

  • Roast
  • Refried beans
  • Flour tortillas

Instructions 

  1. Mix cooked, shredded roast beef with can of refried beans
  2. Fill flour tortillas with mixture
  3. Fold tortillas into rectangular packet and place in 9x13 dish (spray pan with non stick cooking spray)
  4. Spray each tortilla with non stick cooking spray and bake at 350 degrees for 15 minutes. Then turn over and bake another 15 minutes
  5. Top with favorite toppings
