Erin’s Smoked Queso Dip
1 lb Hat Brand Ground Beef, cooked, crumbled & seasoned with 1 teaspoon each: garlic, cumin, oregano, ancho chili pepper, salt & pepper
1/2 lb sharp cheddar, cubed
1/2 lb pepper jack, cubed
1/4 lb cream cheese
1 cup pico de gallo
1 cup pinto beans, drained
1. Combine the above ingredients in a cast iron pan set over indirect heat at 300 degrees F with charcoal and applewood chips.
2. Stir after 15 minutes and continue to heat until melted and bubbly!
