Smoked Meatloaf

A good meatloaf is straight comfort food. This is a recipe that has become a favorite in Ryan and Jacquie's home. Everyone loves when dad makes meatloaf!

Ingredients

  • 3 lbs. Hat Brand ground beef
  • 1 lb. breakfast sausage
  • ½ cup finely diced onion
  • ½ cup finely diced red pepper
  • 4 eggs
  • 4 tsp. Redmond real salt
  • 2 cups bread crumbs
  • 2 chipotle peppers chopped
  • 1 ½ cup milk

Directions

  1. Mix and form into 2 loaves.
  2. Lightly coat with favorite rub or salt and pepper
  3. Place in smoker at 225. After 2 hours, raise temperature to 275

Glaze 

  • 1 cup BBQ sauce
  • 1 cup apple juice

Directions

  1. Mix and warm up on low heat on stove. Apply glaze when internal temperature of meatloaf reaches 155 (approx 1-1 ½ hours)
  2. Cook until 160 internal and remove
  3. Rest 5 minutes
  4. Slice and add more glaze as desired
