Smoked Meatloaf
A good meatloaf is straight comfort food. This is a recipe that has become a favorite in Ryan and Jacquie's home. Everyone loves when dad makes meatloaf!
Ingredients
- 3 lbs. Hat Brand ground beef
- 1 lb. breakfast sausage
- ½ cup finely diced onion
- ½ cup finely diced red pepper
- 4 eggs
- 4 tsp. Redmond real salt
- 2 cups bread crumbs
- 2 chipotle peppers chopped
- 1 ½ cup milk
Directions
- Mix and form into 2 loaves.
- Lightly coat with favorite rub or salt and pepper
- Place in smoker at 225. After 2 hours, raise temperature to 275
Glaze
- 1 cup BBQ sauce
- 1 cup apple juice
Directions
- Mix and warm up on low heat on stove. Apply glaze when internal temperature of meatloaf reaches 155 (approx 1-1 ½ hours)
- Cook until 160 internal and remove
- Rest 5 minutes
- Slice and add more glaze as desired
