Dry aged beef shanks cross cut with the bone in. This is one of the most underrated cuts of beef. Cooked low and slow, the meat is fall off the bone tender and full of rich, beefy flavor. The bone is full of nutrient dense marrow making it perfect for stews, soups and bone broth. Also great for osso bucco and braised beef shanks.
